Mediterranean moong dal pizza

A moong-dal base cooked on a tawa, topped with vegetables and a modest layer of cheese.

Ingredients

  • ½ cup yellow moong dal, soaked for 4–5 hours
  • 1 green chilli
  • ¼ tsp ginger
  • Salt and water as needed
  • A little oil to grease the tawa
  • Topping: 2 tbsp pizza sauce
  • ¼ cup sliced bell peppers
  • ¼ cup halved cherry tomatoes
  • 2 tbsp sliced onion
  • 2 tbsp sliced olives
  • 40 g paneer or mozzarella
  • ½ tsp oregano and chilli flakes to taste

How to make it

  1. Drain the soaked dal. Blend with chilli, ginger, salt and a little water into a smooth batter.
  2. Spread a small portion on a lightly greased tawa to form a thin base. Cook on low heat until set and lightly golden.
  3. Flip the base, spread pizza sauce and add the toppings.
  4. Cover and cook until the base is cooked through and the cheese has warmed or melted.
  5. Repeat for the second base and serve hot.
