Grilled paneer & hummus bowl

Quinoa, chickpeas and vegetables with warm paneer and hummus. A bowl that brings several everyday ingredients together.

Ingredients

  • ¼ cup cooked quinoa
  • ¼ cup cooked chickpeas
  • 60 g paneer, cubed
  • 2 tbsp hummus
  • ¼ cup diced cucumber
  • ¼ cup halved cherry tomatoes
  • 2 tbsp chopped onion
  • A few sliced olives (optional)
  • 1 tbsp fresh coriander
  • 1 tsp olive oil
  • ½ tsp lemon juice
  • ¼ tsp roasted cumin powder
  • Salt, black pepper and chilli flakes to taste

How to make it

  1. Use a little of the measured oil to pan-sear the paneer with salt, pepper, cumin and chilli flakes.
  2. Arrange quinoa, chickpeas, cucumber, tomatoes, onion, olives and coriander in a bowl.
  3. Add the grilled paneer and hummus.
  4. Drizzle over the remaining oil and lemon juice, then season to taste.
  5. Mix gently and serve.
