Without curd
Ingredients
- 1 cup dry soya chunks
- Water for boiling and ½ tsp salt
- 1 tbsp besan
- ½ tsp ginger-garlic paste
- ½ tsp red chilli powder
- ¼ tsp turmeric
- ½ tsp coriander powder
- ½ tsp cumin powder
- ½ tsp garam masala or chaat masala
- Salt to taste
- 1½–2 tsp oil
- 1 tsp lemon juice
- Optional: kasuri methi or amchur
How to make it
- Boil the soya chunks in salted water for 5–7 minutes.
- Drain, rinse once and squeeze out the water well.
- Mix the marinade ingredients, then coat the chunks evenly. Rest for 10 minutes if possible.
- Air-fry at 180°C for 12–15 minutes, shaking once halfway. Check they are hot through; cook for another 2–3 minutes for more crunch.
Tawa option: roast over a low–medium flame for 10–12 minutes, stirring often. The card suggests 1–2 tsp oil for this method; use this instead of adding a second full cooking-oil allowance.
Oven option: bake at 200°C for 15–18 minutes, turning halfway.
Start with a small portion if soya tends to cause bloating.
