  • ½ cup dry dalia (broken wheat)
  • ½ cup diced carrot
  • ¼ cup green peas
  • 2 tbsp chopped onion
  • 1 tsp oil
  • ¼ tsp cumin seeds
  • ¼ tsp grated ginger
  • 1½ cups water, plus more if needed
  • Salt and coriander to taste

How to make it

  1. Dry-toast the dalia in a pan until lightly fragrant; set aside.
  2. Warm oil, add cumin, ginger and onion, then cook until the onion softens.
  3. Add carrot, peas, dalia and water. Bring to a boil, cover and simmer for 12–18 minutes, adding water as needed for your grain.
  4. When the grain and vegetables are tender, rest covered for 5 minutes. Finish with coriander.
